As the winter truffle whole, you can use it in pasta, risotto, eggs, fish or meat. Because it has been preserved it is best if used and cooked a little in your preparation rather than shaving it like a fresh truffle. Count 10-15 g per person to taste it. It goes perfectly with mature wines, from marked terroirs. With red meat, Pomerol or Côtes du Rhône. For a fish, a robust white like a Meursault or white Côtes du Rhone
